100 calorie cake pop for one recipeEver want just one single-serving of dessert without the tempting leftovers? Me too. Here’s my cake pop recipe {for one!}. And major bonus – it’s under 100 calories.

I tried nine different iterations of my recipe to find vanilla & chocolate versions that were delicious and under 100 cals. It’s not easy being a cake pop recipe tester, guys. But I did a lot of calorie math and a lot of cooking, and I finally created the best little single-serving cake pop recipe. For vanilla cake pop
  1. 1 tsp butter
  2. 1 tsp sugar
  3. 1/8 tsp vanilla
  4. 1 Tbsp flour
  5. 1 tsp skim milk
  6. 1/8 tsp baking powder
For chocolate cake pop
  1. 1 tsp butter
  2. 1 tsp brown sugar
  3. 1/8 tsp vanilla
  4. 1 Tbsp flour
  5. 1 tsp skim milk
  6. 1/8 tsp baking powder
  7. 0.25 tsp cocoa
  8. 3 chocolate chips
Instructions
  1. Preheat oven to 325F.
  2. Melt butter (and chocolate chips, if making chocolate pop) in microwave. Set aside.
  3. Combine liquid ingredients (milk and vanilla extract) and dry ingredients in separate bowls.
  4. Combine all ingredients and mix well.
  5. Coat both sides of your cake pop tin with cooking spray.
  6. Add dough to one cup of the tin and close the top.
  7. Bake for 17 minutes or until toothpick inserted comes out clean. Let cool for 5 minutes.
  8. Decorate as desired.
Notes
  1. No cake pop tin? Simply use a regular cupcake tin. You’ll still need to coat this with cooking spray or use a cupcake cup liner.
  2. When ‘naked,’ the vanilla cake pop is 80 calories, and the chocolate pop is 97 calories. There’s no need to add extra toppings, but if you do, watch those extra calories! 3-4 melted chocolate chips and a teaspoon of sprinkles adds just 20 calories.
