Pesto Pasta with Sun-Dried Tomatoes

Pesto Pasta Salad w/ Sun-Dried Tomatoes

When the weather gets hot, we often make pasta, couscous or quinoa salads for dinner. {Potatoes more your thing? Check out my potato salad recipe here} They’re easy to prep, don’t get your kitchen too hot and make great leftovers.

Our grocery store has a pre-made pesto pasta salad, which served as the inspiration for this recipe. I wanted to create my own version, both for cost savings and to make it a tad healthier. This recipe is pretty simple, as you’ll see below, because I bought the pesto from Costco. The ingredient list is healthy and it’s delicious, so we usually keep a jar or two around. Feel free to substitute with homemade pesto. Pesto is a favorite flavor over here, since Brady will eat almost anything topped with it!

I’m not totally lazy, since I did make my own sun-dried tomatoes, which I wrote about here. Actually, that was easy too, since the oven does 99% of the work. So, guess I’m still lazy!😝{True story: When debating blog names, I almost went with The Lazy Dietitian because I’m alllll about fast & easy. The URL is still available. Someone snatch that up!)

I made this pasta salad twice in the past two weeks, for a neighborhood cookout and dinner with guests. Then we worked off leftovers for many days, and it was always a sure-thing for Brady to eat. It’s a great way to feed the babe some peas, AND it works hot or cold. Bon appetit!
