Sun-Dried Tomatoes

sun-dried tomatoes recipeWant to save some money and make your kitchen smell amaazing? Make your own sun-dried tomatoes! In the oven, that is. It seriously could not be any easier. And it’s significantly cheaper than buying them at the store. My grocery sells a small jar of sun-dried tomatoes for $4.99. I bought 6 tomatoes to make a big batch for $0.99. Win! 

These guys take about 3-4 hours of slow roasting. BUT, there’s very little work on your part besides putting them in and taking them out of the oven. I’ve made them twice in the past week for pasta salads. {And this is how I convince my hubby that blogging saves us money😝} 

sun-dried tomato infused olive oilThese tomatoes are a delicious addition to salad, pasta, pizza or sandwiches. They’re perfectly healthy and so flavorful. 

You can also stick them in a jar with olive oil & herbs for a delicious infused olive oil, which is great for pasta sauce, dipping bread or even a nice gift for someone. 


Sun-Dried Tomatoes

Prep Time: 5 minutes

Cook Time: 3 hours

Total Time: 3 hours, 5 minutes

Sun-Dried Tomatoes


  • 6 Roma tomatoes
  • pinch of salt


  1. Rinse your Roma tomatoes and slice them in quarters, length-wise.
  2. Using your fingers, remove the liquid, pulp-y parts of the tomatoes.
  3. Place tomatoes on a baking sheet and drizzle with a pinch of salt.
  4. Roast in a 250F oven for 3 hours, or until tomatoes have reached desired doneness.


Roma tomatoes have less pulp than other varieties, so they're preferable for making sun-dried tomatoes. Tomatoes should have as little pulp as possible when roasting!
